The holidays are here and we couldn’t be more excited! It’s true that we don’t save being festive for December - but, there is of course something very special about it all. When the cooler weather kicks in and we find a few more reasons to treat ourselves in all the ways - we get excited. Cozy food, cozy drinks, and cozy times hanging out with friends and family. It’s the best!
All this coziness might not lend itself to feeling particularly excited about some of the healthier options - like coconuts. Coconuts are rightfully associated with the tropical - and sitting fireside on a snowy night is about as far as you can get from a sandy sunny beach. But think again…
This is actually the most important time of year to be slathering coconuts on everything - food and body. Cooler weather means drier skin and the need for more healthy fats in our diet. Healthy fat in the winter both internally and externally will help you feel more grounded, keep you warmer, calmer, and more satiated. The more healthy fat you eat, the less sugar and carbs you will crave and the less winter weight you will put on. Healthy fats during the winter may help boost mood and prevent seasonal depression and mood swings, boost immunity, and keep your skin hydrated.
With the holiday just around the corner - we’ll be sipping on this delightfully rich and creamy version of eggnog all season long - with and without the booze!
4 cups hot water
1/2 cup cashews, soaked
1/2 cups coconut flakes
2 tablespoons coconut oil
Blend all ingredients until smooth. Strain through fine mesh strainer.
2 tablespoons honey or 4 dates (or 4-8 drops Omica Organics Vanilla Stevia)
1 tablespoon vanilla extract (or 1 whole vanilla bean)
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon tocos (optional)
Pinch of sea salt
Blend until smooth.
Makes 4 cups
** To make an adult version add 1.5 oz of bourbon or dark rum (preferably small batch + organic) per cup of ‘nog !
